An Apple a day….

By now you probably know I come from a long line of great cooks and bakers. My Aunt Maybelle is 90 and still loves to bake. This is one of my all-time favorite Autumn treats. It’s scrumptious on a Fall morning with a cup of coffee or hot tea. It also makes the perfect gift during the holidays.

AUNT MAYBELLE'S SPICED APPLESAUCE BREAD

Ingredients

APPLESAUCE BREAD
  • 1 1/4 cups Applesauce
  • 1/2 cup cooking oil
  • 3 tbsp milk
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt, nutmeg, allspice
  • 1/2 tsp cinnamon
  • 1/2 cup chopped pecans 

Instructions

  1. Preheat oven to 350 degrees
  2. Combine applesauce, sugar, oil, eggs and milk.
  3. Sift together flour and other ingredients and sift into applesauce mixture. Beat well.
  4. Topping: Combine 1/2 cup chopped pecans, 1/4 cup brown sugar and 1/2 tsp of cinnamon. Sprinkle over batter.
  5. Bake at 350 degrees for one hour.
