You can’t eat just one…Persimmon Cookies

PERSIMMON COOKIES

Ingredients

  • 1 cup persimmon pulp
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1 tsp. baking soda
  • 2 cups flour
  • 1/2 tsp. of each: cinnamon, nutmeg and ground cloves

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream sugars and butter.  Add egg and mix well.
  3. Mix persimmon pulp and soda and add to creamed mixture.
  4. Add dry ingredients.
  5. Drop by teaspoon onto a greased cookie sheet.
  6. Bake for 12-15 minutes. Cookies will darken after removal from the oven. DO NOT OVER BAKE.
