Creamy Sausage Tortellini Soup
I prefer the refrigerated cheese tortellini instead of the dry. Aldi has two kinds of refrigerated cheese tortellini that are great in this recipe.
Ingredients
- 1 lb Italian Sausage
- 1 small diced yellow onion
- 2 large peeled and diced carrots
- 4 cloves minced garlic
- 1/4 cup all-purpose flour
- 5 cup chicken broth
- 14 ounce refrigerated cheese tortellini
- 1/2 tsp kosher sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp Italian seasoning
- 6 ounce chopped fresh spinach
- 2 cup half and half
Instructions
- In a large stockpot over medium to high heat, cook the sausage until browned. Transfer sausage to a paper towel lined plate to absorb the excess grease.
- Add onion and carrots and saute for about 5 minutes until vegetables are soft. Add garlic and saute for an additional 2 minutes. Stir occasionally to prevent burning.
- Whisk in the flour and cook for about 1 minute. Gradually add in chicken broth and whisk until combined. Cook until mixture reaches a simmer. Reduce heat and simmer on low to medium heat. Simmer for about 5 minutes.
- Pat as much excess grease from sausage and add to the pot. Add remaining ingredients. Simmer for about 5 minutes until tortellini is fully cooked.
- Top with freshly grated parmesan cheese.
