SHAMROCK CRINKLE COOKIES

Ingredients

SHAMROCK CRINKLE COOKIES

• 1 Box Yellow Cake Mix
• 1/2 cup Oil
• 2 Eggs
• Green Food Coloring (I used 4 large drops for desired color)
• 1 cup Powdered Sugar

Instructions

1. Preheat oven to 375 degrees.
2. Put  powdered sugar in shallow bowl and set aside.
3. In a large bowl, mix together the cake mix, oil, and eggs.
4. The dough will be stiff.
5. Add the green food coloring and make sure it is well incorporated into batter.
6. Use a 1 inch cookie scoop and roll into balls.
7. Roll dough into powdered sugar until completely covered.
8. Drop rolled dough 1 inch apart on greased cookie sheet.
9. Bake at 375 degrees for 9-12 minutes.

I love that these cookies only use a few ingredients. I usually keep a yellow or white cake mix in my pantry. You can easily switch out the food coloring and use this recipe for other holidays.
