Digging up Dirt?

This is such a quick and easy Spring recipe. It’s also one of my son’s favorite desserts. I got a little creative and decided to dip strawberries in chocolate to look like carrots. You get your fruit and veggies (well sort of) and some chocolate thrown in for good measure.

DIRT PUDDING

Ingredients

  • 2 (3.5 ounce) packages instant French vanilla pudding mix
  • 3 cups milk
  • 1 cup confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1/4  cup butter, softened
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 (14 ounce) package of Oreo cookies, crushed (divided)

Instructions

  1. Whisk French vanilla pudding mix with milk in a large bowl until softly set, about 2 minutes. Pudding will thicken as it stands.
  2. Cream confectioners' sugar, cream cheese, and butter in a separate bowl until smooth and creamy.
  3. Stir cream cheese mixture into pudding until thoroughly combined. Gently fold thawed whipped topping into mixture.
  4. Place half crushed cookie crumbs in the bottom of a 9x12 inch dish. Spread the filling over the layer of crumbs. Top with remaining cookie crumbs. Chill for at least 30 minutes.
