This Isn’t PB & J

I loved picnics as a kid. Sometimes we’d stop at the Lewisville store for our picnic eats. The Lewisville store was just down the road from our family farm. I still remember the smell of that old general store. Our picnics usually consisted of bologna and cheese sandwiches. If we were lucky, we might get minced ham if the delivery truck came that week. Good old white bread and off we went to find the perfect location. Even if it was in the farm pasture, it was a treat. I’ve come along way since bologna and I’ve traded it for yummy bacon and fig preserves. This is NO PB&J.

Bacon, Fig and Arugula Sandwich

Ingredients

  • 1 sourdough baguette
  • 4 tablespoons fig preserves 
  • 16 slices cooked bacon
  • 1 (5-ounce) container crumbled goat cheese or blue cheese
  • 2 cups arugula
  • 2 tablespoons whole-grain mustard

Instructions

  1. Cut baguette into 4 equal pieces. 
  2. Halve baguette pieces horizontally. Spread each bottom half with 1 tablespoon fig preserves. 
  3. Top each with 4 slices bacon, 2 tablespoons goat cheese or blue cheese, and 1⁄2 cup arugula. 
  4. Spread 1 1/2  teaspoons mustard on remaining baguette halves; place on top of arugula. Refrigerate until ready to serve.
